Restaurant Review: Salvatore's Tomato Pies

Tomato Pie is a regionally specific way to say Pizza. This stems from New Jersey. As with all things pie related I am a fan! Everyone knows everything to come out of Trenton, New Jersey is tasty... Maybe that's not what they are famous for...

However this tomato pie made by Patrick DePula, a New Jersey transplant, is nothing short of amazing. Using the best of local ingredients to make a New Jersey style pizza is the best blend of two worlds. Underground Meat's Pepperoni and local cheeses. NOM!

I have been to Sal's a couple of times on the advice of a friend who lives in Sun Prarie. Each time the pizza has been absolutely stellar and worth the long drive. Imagine my joy at finding out they are planning on opening a new location on East Johnson in November!

This style of pizza uses a New York style crust with the most balanced and flavorful tomato sauce. It's heavy on the sauce and made with the very best of local toppings.

We started with their bacon and cheese bread, because I mean why not! Jones Farm Bacon, Farmer John’s Colby Caliente, smoked gouda, Stalzy’s Baguette, served with a smear of Sriracha and a sprinkling of sea salt! Absolutely tasty, delicious and makes me want to eat their pizza even more! It was the perfect appetizer.

I have ordered a plethora of their pizzas and have never been anything less then overjoyed!

Half Terrance's favorite: Fraboni's Italian Sausage, Caramelized onions, red peppers, Goat cheese and whole milk Mozzarella.

Half Wed. Special: I would call it the Kitchen Sink Pizza. Berkshire Pork Carnitas, chorizo, green tomatoes, red onion, kalamata olives, sun dried tomato pesto, feta, and fresh parsley.

Half Underground Meat's Heritage Pork Pepperoni and portobello mushrooms
Half Carbonara: Farmer John's Colby Caliente, portobello mushrooms, Jones Farm bacon, mozzarella and 3 organic soft cooked eggs, finished with baby arugula.

The absolute favorite for all 4 people at the table was the Carbonara. Everyone was a little surprised at how much the loved that pizza. The combination of the fresh barely wilted arugula, creamy, almost custardy eggs, and delicious bacon was a delight!

Everything is fabulous and lovingly made at Salvatore's. Once they open their Madison location. I think this will quickly become a Madison tradition. I won't even describe the other ones... This you HAVE to try for yourself
